    Add all the ingredients for the coconut mixture in a mixer jar. Pulse it briefly to lightly crush the coconut mix.

    Heat oil in a pan and crackle the mustard seeds. Add the dried red chillies, curry leaves and shallots. Saute until the shallots turn translucent.

    Add the prawns and salt, and mix. Add the coconut mixture on top. Without stirring, cover and cook for 2 minutes.

    Open the lid and stir for a further 2 minutes. Prawn thoran is ready to serve! It is best eaten with rice.
