Method
Wash the snake gourd, green chillies and curry leaves, and rinse the moong dal. Peel the snake gourd, remove the soft centre and seeds, and cut it into small cubes. Break the dry red chilli.
Grind the grated coconut, green chillies and cumin with the water in a mixie. Grind to a coarse, thick paste and keep it aside.
Add the moong dal, turmeric powder and water to a kadai. Cover and cook on medium flame for 10 minutes until the dal is partly tender. Add the snake gourd and cook covered for 8 to 10 minutes until the dal is soft and the vegetable still holds its shape.
Mix in the ground coconut paste and salt. Cook on low flame for 3 to 4 minutes until the raw smell goes and the mixture becomes thick and dry.
Heat the oil in a small kadai on medium flame for 1 minute until hot. Add the mustard seeds and cook for about 0.5 minute until they splutter. Add the urad dal, dry red chilli, curry leaves and asafoetida, and fry for 1 to 2 minutes until the dal turns light golden.
Pour the tempering over the kootu and mix gently. Cook for 1 minute on low flame, then switch off when no loose water remains.
