Cookd masalas for rava
Method
Grease a small steel tray or plate with ghee. Keep it ready beside the stove, as the burfi mixture must be spread quickly.
Dry-roast the rava in a kadai on low flame for 2 minutes until it feels sandy and smells roasted. Do not let it brown. Add the grated coconut and roast for 1 minute until it is warm and dry; remove the mixture to a bowl.
Add sugar and water to the same kadai. Boil on medium flame for 6 to 7 minutes, stirring until the sugar melts and the syrup reaches one-thread consistency. Cool a drop for a few seconds, then press it between two fingers; it should make one thin thread when opened.
Add the roasted rava and coconut mixture to the syrup slowly, stirring continuously. Cook on low flame for 14 to 15 minutes until the mixture turns thick and frothy, holds together, and starts leaving the sides of the kadai. Mix in ghee and cardamom powder during the last 2 minutes; do not cook after the mixture releases from the pan.
Transfer the hot mixture immediately to the greased tray and level it with a greased spoon. Rest for 12 minutes until warm and firm, then cut into small squares. Let the pieces cool fully before lifting them out.
