Goan kulkul from a maida, semolina, egg and coconut milk dough, curled, deep-fried and glazed in sugar syrup. Makes 8 servings in about an hour, with video.

Combine the maida, semolina, powdered sugar, baking powder and salt. Add the ghee and combine using your fingers.

Add the egg and mix with your fingers. Add the coconut milk a little at a time until the dough is soft, but not sticky.

Knead for 2 minutes. Cover and rest for 30 minutes.

Divide into small balls. Flatten it and shape it using a comb or a fork. Roll from one end using your finger.

Deep fry on medium flame until golden brown.

To prepare the glaze, heat the sugar and water until it reaches a thick consistency.

Drop the cooled down kulkuls in the sugar syrup and mix. Remove it from the syrup and spread it on a flat tray. Make sure that there is sufficient gap so that they don’t stick to each other. Store in an airtight container.
