Cookd masalas for rava
Method
Get ready. Wash the tomato, green chillies and coriander leaves. Peel and finely chop the onion. Deseed and finely chop the tomato, finely chop the green chillies and coriander leaves, and whisk the curd.
Mix the rava, rice flour, whisked curd, salt and 150 ml water in a bowl. Make a smooth, slightly thick batter and rest it for 15 minutes until the rava softens.
Add the chopped onion, tomato, green chilli and coriander leaves to the rested batter. Mix well until the vegetables are spread evenly through the batter.
Add the baking soda and up to 30 ml water as needed. Mix gently for 1 minute until the baking soda is evenly mixed and the batter is thick but pourable. It should spread slowly on the tawa.
Heat a tawa on medium flame for 2 minutes until hot; a drop of water should sizzle on it. Grease it with a little oil. Pour one-fourth of the batter and spread it gently into a thick round uttapam.
Sprinkle a little oil around the edges and cook on medium flame for 2 to 3 minutes until the bottom is golden and the top starts to set. Flip and cook for 1 to 2 minutes until the vegetables are cooked and both sides have light brown spots.
Repeat with the remaining batter and oil to make 3 more uttapams. Cook each uttapam for 3 to 5 minutes until the vegetables are cooked and both sides have light brown spots. Serve hot with chutney or sambar.
