Peel and cut the potatoes into matchsticks. Fry the matchstick potatoes in oil until golden brown and set aside.

In a pressure cooker oil, add the whole garam masalas and finely chopped onion and saute until the onions almost turn golden brown then add tomato puree and cook for 3 minutes, add all the powdered spices, salt and mix thoroughly.

Add the mutton once the oil separates from the tomato puree. Cook the mutton on a high flame for 2-3 minutes then add the apricots, vinegar and jaggery.

Add the water and pressure cook for 4 whistles on a medium flame and let the pressure subside before opening. Garnish with the salli potatoes and serve.
