Soak the idli rice for at least 1 hour.

Grind it in a mixer, with salt and water. The batter should be fine textured and of thick consistency.

Grease the idli molds with oil. Pour the batter into idli molds and steam it for 20 mins or till done. Check the doneness by inserting a knife, it should come out clean. Scoop out the idlis and cool it down.

Using a sandhagai maker, press the idlis. Serve the sandhagai with sweetened coconut milk/ ghee and jaggery or prepare any other dish of choice.
