Cookd masalas for chicken
Method
Wash and soak basmati rice for 30 minutes.
To make the rice, add oil and ghee to another pot. Add the whole spices and toast until fragrant, around 30 seconds. Add the green chillis, curry leaves and cashews. Saute for 1 - 2 minutes, or until the cashews start to turn golden brown.
Add the ginger garlic paste, mint leaves and coriander leaves. Saute for 1 - 2 minutes, or until fragrant. Add curd and fry for 30 seconds. Add water, salt and lemon juice.
Stir gently for 2 minutes, or until the rice starts to float to the top. Cover tightly and cook for 12 minutes on a low heat. Once done, rest for 15 minutes before opening and fluffing gently.
Blend all the ingredients required for the masala.
In a pan, add oil. Once hot, add the chicken and fry for 2 - 3 minutes. Add the onions and green chillis and cook for another 4 - 5 minutes, or until the onions start to soften,
Add ginger garlic paste, red chilli powder, turmeric poweder, and all of the prepared masala blend. Mix to combine well and cook for 7 - 8 minutes. The chicken and onions should release enough water, but add as needed, if the chicken starts to stick to the bottom of the pan Once the chicken is cooked and a thick gravy has formed, add curry leaves and remove from the heat. Serve the chicken on top of the rice, along with lemon, a fried boiled egg and onions.
