    Prepare a thick batter with maida, cornflour, salt, pepper and water. Mix till there are no lumps. Add the paneer to it and coat it well.

    Heat oil in a kadai. Deep fry the paneer to a golden brown colour. Keep it aside.

    Blend the boiled chillies to a fine paste.

    Heat a pan, add oil, garlic and celery. Saute for 2 minutes

    Add the chilli paste and cook till it releases oil. Add tomato sauce, salt and mix well till all ingredients combine evenly.

    In a pan, add oil, curry leaves and dry red chillies.

    Add onion and saute it until it turns translucent

    Add water if necessary. Add salt, prepared schezwan sauce, tomato ketchup, fried cashew nuts and coriander leaves.

    Add the fried paneer and toss it on a high flame till it is coated with the sauce. Garnish it with spring onions. Serve it hot.
