Method
Get ready by rinsing the moong dal and curry leaves. Peel the bottle gourd, remove the soft centre and cut it into small cubes. Taste a tiny raw piece and discard the whole bottle gourd if it is bitter. Slit the green chilli. Pat the curry leaves dry so they do not splutter in hot oil.
Add the moong dal, turmeric powder and water to a kadai. Cover and cook on medium flame for 12 minutes until the dal is partly soft. Add the bottle gourd and cook covered for 8 minutes until the dal is soft and the bottle gourd is tender but not mushy.
Grind the grated coconut, cumin, green chilli and water in a mixie. The paste should be thick and slightly coarse.
Add the coconut paste and salt to the cooked dal and bottle gourd. Mix gently and cook on low flame for 5 minutes, until the raw smell goes and the mixture becomes thick.
Heat oil in a small kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for 30 seconds until they splutter. Add urad dal, curry leaves and asafoetida, then fry for 1 to 2 minutes until the dal turns light golden.
Pour the tempering over the kootu and mix gently. Cook on low flame for 2 minutes, then switch off when the kootu is thick and holds together as a dry side.
