    Wash and soak the rice for 20 mins. Soak the soya chunks in water for 20 mins, squeeze and strain.

    Combine the whole spices in a pan and dry roast them until aromatic, 3 minutes.

    Transfer to a mixer grinder and make a powder. Add the ingredients for the masala to the same blender and blend without water until smooth.

    Heat ghee in a pot, add the bay leaf and ginger garlic paste. Add the masala and saute well until aromatic and the raw smell goes, for 5 minutes.

    Add the tomatoes and the powdered spices. Saute for 2 mins until soft.

    Add the curd and mix well. Drain, squeeze and add the soya chunks and potato and mix well.

    Add lemon juice, 2.5 cups of water and salt to season. Bring it up to a boil.

    Add the rice and cook until the level of rice and water are equal.

    Turn down the heat, cover with foil and cook for 14 mins.

    Open carefully and fluff up the rice with a fork.
