To a bowl, add dry red chillies and hot water. Immerse the chillies and let it soak for 10 minutes Transfer the soaked chillies to a blender, add chopped ginger and garlic. Add a little bit of the chilli soaked water and blend it to a fine paste

To a bowl, add the diced paneer, cornflour, maida, salt, black pepper powder and water. Mix till the paneer is coated with the batter. Heat oil in a kadai and deep fry the paneer till golden and crispy.

Heat a pan/wok, add the chopped ginger and garlic. Saute for a few seconds Add the spring onion whites and saute for a few seconds. Add the chilli paste and cook on a medium heat till for 2 minutes.

Add the diced onion and capsicum and toss on a high flame for a few seconds. Add soy sauce and ketchup, mix till combined. Add water, salt, mix and bring the sauce to a boil. Add the fried paneer and toss on a high flame till it is coated with the sauce. Add chopped spring onions, give it one final toss and take if off the flame. Serve it hot.
