Cookd masalas for rice flour
Method
Whisk the rice flour, buttermilk and salt in a bowl until smooth, with no lumps. Finely chop the green chillies and coriander leaves, and grate the ginger.
Heat the oil in a heavy pan on medium flame. Add the mustard seeds and let them pop. Add the cumin and asafoetida, then the ginger, green chillies, curry leaves and turmeric powder. Fry for 1 minute.
Add the water and sugar and bring to a boil, for about 3 minutes.
Lower the flame. Pour in the rice flour and buttermilk mix slowly, stirring all the time. Keep stirring for 5 minutes until it turns thick like a soft porridge.
Cover and cook on low flame for 3 minutes until the raw smell of the flour goes and the ukad looks glossy.
Serve hot in bowls with a spoon of ghee on top and the coriander leaves.
