    In a pan pour the coconut milk and once it comes to a mild boil add the washed and soaked basmati rice and salt. Bring it to a boil and turn down the flame to a simmer and cook covered for 12 minutes, let the rice rest for 10 more minutes before fluffing it up.

    In a kadhai, pour coconut oil, add the mustard seeds, and once they splutter add the urad dal and cashew nuts, and saute until they turn golden brown. Add the onion, green chillies, curry leaves and garlic, and saute for 30 seconds on a moderate flame or until the onions turn translucent. Add the cooked rice, salt and grated coconut. Toss the rice until completely mixed. Garnish the rice with coriander leaves and serve hot.
