Heat oil in a pan and splutter the mustard seeds.

Add the dried red chilies, asafoetida, garlic, and ginger. Lightly saute them and then add in the tomato, turmeric powder, salt, and sugar.

When the tomato softens and releases its moisture, add the mint leaves and coriander leaves. Cook for 1 more minute.
