Cookd masalas for rice sevai
Method
Get ready by washing the tomatoes, green chillies, curry leaves and coriander leaves. Peel the onion and ginger. Finely chop the onion, ginger, tomatoes and coriander leaves, then slit the green chillies. Pat the curry leaves dry so they do not splutter in hot oil.
Bring 2 litres of water to a boil on high flame for 8 to 10 minutes until it bubbles well. Add the rice sevai and cook on medium flame for 4 to 5 minutes until soft but not mushy. Drain it fully and spread it on a plate so the strands do not stick.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for 1/2 minute until they crackle. Add urad dal, curry leaves and green chillies, and fry for 1 minute until the dal turns light golden.
Add onion and ginger. Fry on medium flame for 4 to 5 minutes until the onion turns soft and light golden.
Add turmeric powder, red chilli powder, tomatoes, salt and water. Mix and cook on medium flame for 8 to 10 minutes until the tomatoes become soft and the oil shows at the sides.
Add the cooked rice sevai and mix gently so it does not become a paste. Cook on low flame for 2 minutes until the sevai is coated with the tomato masala and heated through.
Add coriander leaves and mix once. Switch off the flame and serve hot.
