Cookd masalas for rice sevai
Method
Boil the water and switch off. Add the rice sevai and leave it for 3 to 4 minutes until just soft. Drain well and spread on a plate. Do not soak longer or it turns mushy.
Beat the eggs with the black pepper powder and a pinch of the salt. Keep aside.
Heat the oil in a wide pan on medium flame. Add the mustard seeds and urad dal and fry for 1 minute until the dal is golden. Add the curry leaves, green chilli and onion and fry for 3 to 4 minutes until the onion is light golden.
Add the ginger garlic paste and fry for 1 minute. Add the tomato, turmeric powder, red chilli powder and salt. Cook for 3 minutes until the tomato is soft.
Pour in the beaten eggs. Stir and scramble for 2 minutes until the eggs are cooked into small pieces.
Add the drained sevai. Toss gently with two spoons for 2 minutes so the strands stay whole and take in the masala. Mix in the coriander leaves and serve hot.
