Usili paruppu: chana dal ground with red chillies, steamed in idli moulds and crumbled into tempered beans. Mild, serves 6, 50 minutes plus soaking, video.

Soak the chana dal in water for one hour with dry red chillies. Strain it and Put it in a blender. Add salt and asafoetida and blend it to a coarse texture without adding water.

Take idli moulds, brush oil on them and arrange the blended dal in each section. Fill a vessel with water to a quarter, place the idli moulds in it. Cover and steam it for 10-15 minutes. Take it out and let it cool down

Heat oil in a pan, add mustard, cumin, curry leaves, dry red chillies, and let them crackle.

Add onions and cook it till it is translucent. Add ¼ tsp of asafoetida and mix it well.

Add turmeric powder and mix it well.

Add the chopped beans, saute it for a minute, add water and let it cook till the water is absorbed.

Crumble the steamed dal mixture and add it to the beans. Mix it evenly.

Add ghee, mix it well. Turn off the flame and transfer the mixture to a bowl.

Top it off with a spoon of ghee. Serve it hot.
