    Heat oil and add mustard seeds, allow it to splutter. Add the cumin seeds, asafoetida, dry red chilli, curry leaves, ginger, garlic and green chilli. Saute for a few seconds until aromatic.

    Add the onion and saute until it turns translucent. Add the turmeric powder, red chilli powder, garam masala powder and salt. Saute for 30 seconds. Add the sugar and mix well

    Add the cooked rice. Toss for 2-3 minutes. If needed, add more salt to the rice. Finish with coriander leaves and lemon juice. Give it a final toss and serve.
