    Pressure cook the potatoes for 3 whistles on moderate flame. (Around 6 mins)

    Start by adding atta, maida, salt and ghee together and mix well. Once the ghee is well incorporated with the dry ingredients slowly start adding the water in intervals. Knead the dough for 5-7 minutes till it's smooth and soft and set aside.

    In another bowl, add the potatoes and mash them completely and add the spices- red chili powder, cumin powder, salt and amchur powder and mix well. Now add in the chopped coriander,green chillies and onion, mix well and set aside.

    Roll a small portion of dough into a thick 4-inch circle. Place the aloo stuffing inside and then add the grated mozzarella on top of the potato stuffing and cover the stuffing by sealing the circumference of the dough. Flatten and roll using a rolling pin. Cook the paratha in a Tawa adding ghee on both sides till golden brown and crispy. Serve hot with a little more grated cheese on top.
