For the Chicken Marination : To a bowl, add chicken and the remaining ingredients required for the marination. Mix till all the ingredients combine evenly and the chicken is coated well. Let the chicken Marinate for 30 minutes.

For the masala : Heat a pan, add the spices required for the masala and dry roast them till it turns aromatic. Transfer it into a mixer jar and make a fine powder. Keep it aside for further use.

Heat a pan, add oil. Once the pan is hot, add the chicken and grill it on a medium flame for 5 minutes on each side till grill marks appear on it. Transfer the chicken to a plate and keep it aside.

Heat a kadai, add oil and ghee. Add a bay leaf, green chillies and chopped onion. Saute till the onion starts to turn golden brown. Add ginger garlic paste and saute for a minute. Add 1 ½ tbsp of the dry roasted masala and mix for a minute.

Add the tomatoes and saute for 4-5 minutes. Add ¼ Cup water and keep mixing on a high flame till the tomatoes turn soft and mushy. Add curd and mix well for a minute. Add ¾ Cup Water, mix well. Add salt and mix well. Bring the gravy to a boil.

Add the grilled chicken and mix till it combines well with the gravy. Bring it to a boil, cover and simmer it for 10 minutes. Stirring occasionally. Add butter, cover and simmer it till the butter melts. Open the pot, give the mixture a mix. Add chopped coriander leaves, mix well. Give it one final boil and take it off the flame. Serve it hot with roti or rice.
