Cookd masalas for ripe nendran banana
Method
Peel the bananas and mash them in a bowl until mostly smooth. Grate the jaggery.
Add the jaggery and water to a kadai. Stir on medium flame for 4 to 5 minutes until the jaggery melts fully. Strain the syrup if it has dirt, then return it to the kadai.
Add the banana mash to the jaggery syrup and mix well. Cook on medium flame for 3 minutes, stirring often, until evenly mixed and bubbling.
Add 1 tablespoon ghee. Cook on medium flame for 8 to 10 minutes, stirring often, until the mixture thickens and the raw banana smell reduces.
Add 2 tablespoons ghee in small portions and keep stirring. Cook on low flame for 10 to 12 minutes until the halwa turns dark, looks glossy and starts leaving the sides of the kadai.
Add the cardamom powder and mix well. Cook on low flame for 1 to 2 minutes until the halwa comes together as a soft, thick mass and does not look watery.
Grease a plate with 1 teaspoon ghee and transfer the halwa to it. Spread it evenly and cool for 15 minutes until set enough to slice or serve.
