    Cut the brinjal into batonnets and marinate it with turmeric and salt

    Heat coconut oil in a kadai and fry the shallots, green chillies and curry leaves. Take it out and keep it aside.

    In the same oil, fry the brinjal, take it out and keep it aside.

    Crush the ginger and garlic.

    In a pan, combine crushed ginger garlic along with turmeric powder, red chili powder, rice vinegar and heat it. Add sugar to this and cook it for 1 min.
