    In a pan on high heat, add some oil. Once shimmering, add in the eggplant and cook until it just begins to soften. Lower the flame to a medium heat and add water. Cover the pan and let it cook for 10 minutes. Once the eggplants have cooked, add the podi and toss to coat the eggplant in it. Garnish with coriander.
