Method
Get ready: wash the carrots, green chilli and curry leaves. Peel the carrots and cut them into thin strips. Peel and finely chop the onion, slit the green chilli and grate the coconut. Pat the curry leaves dry so they do not splutter in hot oil.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and cook for 30 seconds until they splutter. Add urad dal and curry leaves, then fry for 30 to 45 seconds until the dal is light golden and the leaves are crisp.
Add the chopped onion and green chilli. Fry on medium flame for 3 to 4 minutes until the onion is soft and light golden.
Add turmeric powder, carrot and salt. Mix well, add water and cover the kadai. Cook on low flame for 7 to 8 minutes until the carrot is cooked but still holds its shape.
Open the kadai and cook on medium flame for 2 to 3 minutes until the extra water dries. Add the grated coconut and cook for 1 minute until the palya is dry.
