Method

  1. 1

Get ready: Wash and peel the carrots, then grate them. Peel and finely chop the shallots and garlic. Wash and deseed the green chillies, slit them, and wash the curry leaves before removing them from the stalks. Pat the curry leaves dry so they do not splutter in hot oil.

  2. 2

Heat the coconut oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and fry for 1 minute until they splutter. Add the curry leaves and green chillies, and fry for 1 minute until the curry leaves turn crisp.

Add the chopped shallots and garlic. Fry on medium flame for 3 to 4 minutes, until the shallots turn soft and lightly golden and the raw garlic smell goes.

  4. 4

Add the grated carrot, turmeric and salt. Mix well and fry on medium flame for 2 minutes, until the carrot is coated with the spices.
