Method

    Marinate the chicken with all the ingredients for the marination. Rest for at least 30 minutes.

    In a pan, heat oil and add cinnamon, cardamom and cumin seeds. Add the onion and saute until golden brown.

    Add the ginger garlic paste and saute lightly to remove the raw taste. Add the spice powders, salt and tomatoes. Cook until the tomatoes turn mushy, around 4 minutes.

    Remove ⅓ of the quantity of masala from the pan. Set aside for later.

    Add the marinated chicken and saute on high flame for 2 minutes.

    Add ½ cup of water. Reduce the heat to low, cover and cook for 15 minutes.

    Meanwhile, heat another pan and add oil. Add garlic and ginger. Saute until the colour barely changes.

    Add the previously reserved masala. Mix well.

    Add the diced onion and capsicum. Saute for 1 minute.

    Add the cashew paste, saute for 1 minute.

    Add water and allow it to simmer for 2 minutes.

    Add this gravy to the 1st gravy. Mix well and allow it to simmer for 5 minutes or until the chicken is completely cooked.

    Add the garam masala powder, kasuri methi, butter, cream and coriander leaves. Turn off the heat as soon as it comes to a simmer.
