    Add the fish pieces to a bowl. Add salt, pepper, ginger garlic paste and egg white. Mix it to combine.

    Add the cornstarch and mix to form a coating.

    Heat oil in a pan and deep-fry on medium heat for 4 minutes, or until it starts to turn golden brown. Take it out of the oil.

    Turn up the heat to high. Add the fish back into the oil, and fry for 1 minute. Remove and set aside.

    Heat oil in a pan.

    Add ginger, garlic and green chilli. Saute for a few seconds until it turns aromatic. Add onion and capsicum, and saute on high heat for 30 seconds. Mix all the sauces together in a small bowl. Add the prepared sauce mixture to the pan.

    Add the fried fish. Mix to coat.

    Mix the cornstarch and water together. Add the cornstarch slurry, mixing it well once before adding. Heat until it thickens, then add the chopped spring onions.
