    Place the maida, salt and ajwain in a bowl and rub in with the oil to make a crumble consistency.

    Add water and knead a semi-hard dough and rest it for 20 mins.

    For the mixture, coarsely grind the sev with all the spices and seasonings.

    Heat oil in a pan and add the mixture, saute until aromatic and the oil is absorbed well. Set aside the mixture to cool.

    Portion the dough into roundels. Roll out into circles and cut into semi-circles.

    Make a cone with the semi-circle and place the stuffing, enclose the samosas securely.

    Deep fry in medium hot oil until golden brown. Cool completely and store airtight.
