Cookd masalas for curd
Method
Put the flattened rice in a colander and rinse it quickly under running water. Drain it at once and rest it for 10 minutes until it is soft but the flakes stay separate. While it rests, peel and finely chop the onion and ginger, slit the green chillies and chop the coriander leaves.
Whisk the curd with salt and 100 ml water until smooth. Add the softened flattened rice and mix gently until all the poha is coated.
Heat the oil in a small kadai on medium flame for 1 minute until hot. Add the mustard seeds and let them crackle. Add the urad dal and fry for 1 minute until light golden. Add the ginger, green chilli and curry leaves and fry for 30 seconds.
Add the chopped onion and turmeric powder. Fry on medium flame for 2 to 3 minutes until the onion turns soft and lightly golden.
Pour the tempering over the curd poha and add coriander leaves. Mix gently until evenly combined, then serve immediately.
