In a pan add ghee, whole garam masalas, onion, pandan leaves, and lemon grass.

Add the basmati rice, raisins, and cashews in the mixture. Saute until the mixture turns aromatic and set it aside.

In the same pan add some more ghee and add the whole garam masalas, onion, curry leaves and tomato. Add salt and cook until the mixture turns mushy, add the powdered spices, saute until the raw flavour disappears.

Add the chicken and saute for 2 minutes on high heat.

Add back the rice and pour the water and milk mixture, saffron milk. Bring it to a boil, reduce the heat to a simmer, and cook for 12-14 minutes or until the rice is thoroughly cooked. Add the coriander and mint leaves along with the fried cashews and serve hot.
