Cookd masalas for garlic paste
Method
Mix rice flour, besan flour, cumin, asafoetida and salt in a wide bowl. Add garlic paste and melted butter, then mix until the flour looks evenly coated.
Add water little by little and knead into a soft, smooth dough. The dough should hold its shape without sticking to your fingers; cover it while you prepare the oil.
Heat oil in a kadai on medium flame for 5 minutes. Drop a small piece of dough into the oil; it should rise slowly with steady bubbles, not turn dark at once.
Grease a murukku press and fill it with some dough. Press small spirals onto a greased plate, then gently slide them into the hot oil in batches.
Deep fry in about 5-6 batches, 3-4 minutes per batch and about 24 minutes in total, turning once, until the bubbles reduce and the murukku is light golden and crisp. Drain on a plate lined with paper.
Cool the murukku fully for 10 minutes before storing it in an airtight container. It becomes crisper as it cools.
