Cookd masalas for mutton (minced)
Method
Heat oil and ghee in a pot, and add the whole spices. Add half of the slit green chillies to the pot and add the thinly sliced onions. Cook until the onions are translucent.
Add the ginger garlic paste and continue to cook until the raw smell goes away, around 2 minutes. Add the tomatoes and saute until mushy, around 6 minutes on a medium flame. Add the coriander and mint leaves and mix to combine.
Add garam masala, kashmiri red chili powder, coriander powder, salt and curd. Mix well and cook for 2 minutes. Add lemon juice, and mix well.
Add the kheema and saute until all the water from the kheema has evaporated. Add 1¼ cups of water and cook the mutton for 10 minutes on medium high heat.
Once the kheema is 90 percent cooked and almost all the water has evaporated, add 4 cups of water and bring it to a boil. Once boiling, add the samba rava. Cook for 10 minutes on low heat while stirring gently. Then turn the flame of and cover, allowing it to rest for 10 mins before opening the pot. Serve hot with onion raita.
