    To a large bowl, add the Maida. Add curd and ½ cup of water and mix until there are no lumps.

    Add the hing, ginger, green chilli, curry leaves, black peppercorn and cumin seeds. Beat for 4-5 minutes using your hands to make the batter fluffy and slightly stretchy.

    Add salt, baking soda, and mix to combine. Mix well, and rest for 15 minutes at room temperature.

    Using wet hands, take small portions (around 1-2 tbsp) of the batter and drop it into hot oil.

    Deep fry until it turns golden brown and is floating in the oil. Remove from the oil and serve hot with coconut chutney.
