    In a pan pour water, add vinegar and sugar. Bring it to a boil. Blanch all the ingredients for the paste for 10 seconds and blend it into a fine paste along with some oil.

    In a deep pan pour ghee, add the whole garam masalas and onion. Saute until the onion turns translucent and aromatic (around 1 minute) add the ginger garlic paste and saute for 30 seconds or until the raw flavour disappears.

    Add the soaked rice. Gently mix the rice without breaking it.

    Add the prepared paste. Pour water, add salt and bring it to a boil. Reduce the flame to a simmer, cover and cook for 12 minutes. Let the rice rest for 10 minutes, fluff it up and serve hot.
