Method

    In a thick-bottomed pan, add the copra or desiccated coconut and roast until lightly golden, make sure not to roast the coconut over and set aside. Add all the other ingredients one by one and roast on a very low flame until all the moisture is evaporated and nicely roasted. Add the toor dal and roast it for 1-2 minutes on a very low flame, we do not want any colour on the toor dal.

    Let the mixture cool down completely before blending it into a fine powder.

    Add 4 tbsp of the prepared instant sambar powder and saute for 10 seconds. Pour water and bring it to a boil.

    Cover and cook for 6-7 minutes or until all the vegetables are mushy and the sambar is thick. Finish the sambar with coriander leaves and a simple mustard red chilli and curry leaf tempering.
