Add brinjal, potato, tomato, and water to a pressure cooker and cook for 3 whistles.

Once the pressure dissipates, remove half the water from the cooker and transfer it to another bowl. Now peel the potato, mash the cooked vegetable gently and keep it aside.

Add oil, mustard seeds, and urad dal in a kadai and let it fry for a few seconds. Add onion and green chillies. Saute for 5 minutes till the onion becomes translucent.

Now add the mashed vegetables and simmer them for 10 minutes. Finish with coriander leaves at the end and serve it hot.
