Add all the ingredients i.e., mustard seeds, cumin seeds,urad dal,Fenugreek seeds, Hing, turmeric powder, coriander seeds,Bengal gram,red chillies ,garlic cloves & curry leaves. Roast all, till the seeds become golden brown , in a low or medium flame. Keep it aside and let it cool.

Then in a food processor or Grinding mixer add all the roasted ingredients and add salt in it. Make a fine powder.

Cut and slit the Brinjal into four halves( do not cut till the end).

Now stuff the powder into the Brinjal.

Now add 5 tbsp oil into a pan or kadai. Add the stuffed brinjals one by one into the kadai.
Groundnut oil

Close the lid and cook it in a low -flame, until the brinjals turn soft. Ready to serve.Hope u try and enjoy it. It can be served with rice and as a side dish.
