    In a preheated pan, add oil. Once hot add the Urad dal. Fry it until golden, around 1 minutes on a medium heat. Then add the onion and garlic and saute for 4 minutes, or until softened and translucent.

    Add the eggplant and mix to combine. Add the red chilli powder and salt, mix it well. Add a little bit of water to prevent any burning and close with a lid. Cook it for 10 minutes on a medium heat.

    After the eggplant has softened, add the coconut and saute on a medium high heat for 2 - 3 minutes.
