    Add the egg and sugar to a bowl and beat thoroughly with a fork. Beat it for around 3 minutes, or until the mixture becomes thick, fluffy and pale. Add the oil the the bowl and whisk to incorporate.

    Add the maida and coffee powder to the mixture and gently mix to incorporate. At this point the mixture should become nice and thick. Add half the banana and mash it into the mixture. Once combine, pour in the milk and whisk to incorporate it. The batter should be nice and loose.

    Once the batter has come to the correct consistency, add the chocolate and eno. Mix to combine well.

    Grease a small metal vessel that fits inside the kettle and pour the batter halfway up the vessel. Gently tap the vessel against a flat surface to even out the surface. Pour some water into the kettle and place the cupcake into the kettle. The water should just barely come up the side of the vessel. Turn the kettle on and let the cupcake steam for 8 minutes. Once it is done cooking, the surface should be smooth and when poked, the cupcake should feel springy.
