    Heat oil in a kadai over medium-high heat. Add small onions (shallots), green chillies and Sauté for 2–3 minutes until the shallots begin to soften.

    Add the cleaned mutton pieces and mix well with the aromatics. Cover with a lid and cook until the mutton releases its moisture. Remove the lid and continue cooking, stirring occasionally, until most of the moisture evaporates.

    Add the Mutton salna and mix thoroughly so every piece is evenly coated. Continue roasting uncovered, stirring frequently, until the masala turns dark, coats the mutton completely, and the oil starts to separate. Finish by roasting for another 2–3 minutes to achieve the dry chukka texture. Serve hot with parotta, dosa, chapati, or steamed rice.
