    To a pressure cooker on medium flame, add the ghee along with the whole spices. Once fragrant add the onions and cook until they turn lightly brown. Add in the tomatoes and cook until they become mushy and turn into a chunky paste. Add in the salt, crushed black pepper and ginger garlic paste and mix to combine.

    Once aromatic and the paste starts to lightly stick to the bottom, add in the mutton. Cook the mutton until almost all of its water evaporates. Add the water and bay leaf and bring it to a boil.

    Close the lid and let it pressure cook for 6 whistles on a medium heat. Once finished, let the pressure release naturally. Garnish with coriander and mint.
