Method

To a bowl, add the maida, ajwain, salt and ghee. Mix using your fingers until it turns crumbly, similar to fine breadcrumbs.

Add water gradually and knead it into a stiff dough. Cover and rest for 20 minutes.

Roll out a piece of dough flat, but make it thicker than a roti/chapathi. Cut it into 1-inch wide strips. Then cut it diagonally to make diamond shapes. Run a knife or spatula underneath to release the pieces.

Heat oil for deep-frying. Once hot, add the dough pieces and then reduce the heat to medium. Fry until the colour is light golden brown. This can be cooled and then stored in an airtight container for up to a month.
