    Start whisking the egg whites until they get foamy. Start slowly adding the sugar in batches and keep beating till it forms stiff peaks. This process should take around 7-9 minutes. Whisk in the egg yolks and the vanilla extract. Next, whisk in the melted butter and the butter and slowly mix it until all the wet ingredients are incorporated. Sieve the maida, baking powder, baking soda and salt.

    Slowly fold in the dry ingredients into the wet mixture, mix well and set aside. Grease the pressure cooker with melted butter and place butter paper at the bottom of the cooker. Pour the batter into the pressure cooker. Keep a flat surfaced pan or a tawa on medium heat and leave it for 5 minutes. Place the pressure cooker on the pan and reduce the heat to the lowest setting.Make sure you don't add the whistle to the cooker. Leave the cooker for 30-40 minutes until a toothpick inserted comes out clean. Once cooked, let it cool for 15 minutes before running a butter knife along the edges of the cake so it comes out easily.
