Method

    In a bowl, add the water, sugar, salt, yeast and olive oil. Mix and set aside for 5 mins.

    Add the flour and mix with a spatula until all the flour has hydrated. Cover and rest for 30 mins.

    Maida

    With wet hands, make folds from the outside to the inside to form a sort of rough ball - roughly 7-8 folds. Cover and rest again for 30 mins.

    With wet hands, make a book fold by gently lifting the dough and folding it over itself. Cover and rest again for 30 mins and repeat the book folds - these folds help develop gluten in a dough without kneading. Place the dough in the fridge overnight - 12 hours or up to 24 hours.

    Tip the dough out on to a floured surface and cut them evenly into four. Place on a baking sheet and allow it to double in size. Bake at 250C for 15 mins. Spray some water to generate steam. Reduce the temp to 220C and bake until golden brown and crusty, another 7-8 mins. Cool completely, slice and serve.
