Method

  1. 1

Peel and finely chop the onions. Wash and finely chop the green chillies. Wash and chop the curry leaves and coriander leaves. Pat the curry leaves dry so they do not splutter in hot oil.

  2. 2

Mix the Idli Dosa Batter gently. Taste it and mix in the salt only if needed. Add the water little by little until the thick batter pours slowly from a spoon. Add the onion, green chilli, curry leaves and coriander leaves, and mix evenly.

Heat 1 tablespoon oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and cook for 30 seconds until they splutter. Add the urad dal and fry for 1 minute until light golden. Pour the tempering into the batter and mix well.

Heat the paniyaram pan on medium flame for 2 minutes until hot. Add a few drops of oil to each hollow, fill each one three-fourths with batter, and cook for 2 to 3 minutes until the bottom is golden and the sides are set. Turn the paniyaram, add a few more drops of oil, and cook for 2 to 3 minutes until golden and a skewer comes out without wet batter. Repeat for about 5 to 6 batches, using the remaining oil, until all the batter is cooked. The batter makes about 5 to 6 batches; cook each paniyaram for 4 to 6 minutes.
