Pressure cook the soaked chana with water, salt, black cardamom and bay leaf for 6 whistles on a medium-low flame. Allow the pressure to release naturally; the chana should be soft when pressed. Remove some chana from this and mash it well. Keep aside, this will be used to thicken the gravy.

For the palak puree, blanch palak spinach in boiling water for 1 min. Drain and place in cold water. Squeeze out the excess water. Transfer to a mixie jar with some water and blend to a fine puree

For the masala, heat ghee in a pan. Add the whole spices and cumin seeds. Fry briefly. Add onions and saute until they start developing a brown colour, add the chopped green chillies and ginger garlic paste. Cook till the raw smell goes.

Add the tomatoes, powdered spices and salt. Add a splash of water and cook until the tomatoes are soft and the oil starts to release.

Add the palak puree and mix well. Add the boiled chana. Cover and simmer for 5-7 mins.

Open the lid, add the mashed chana and kasuri methi. Mix well and cook to the desired consistency. Finish with ghee and fresh coriander leaves. Serve hot with chappatis or pooris
