In a pan, heat oil and add cumin, dry red chilli, ginger and curry leaves. Saute for a few seconds till it turns aromatic.

Add peanuts and roast on medium-low heat for 3-4 minutes, until slightly golden.

Add tomato and red chilli powder. Saute for 4 minutes or until the tomatoes soften. Turn off the heat and allow the mixture to cool. Grind into a paste and transfer to a bowl.

In a small pan, heat oil and splutter the mustard seeds. Add the curry leaves and dry red chilli, and turn off the heat. Pour this tempering over the chutney. Serve with dosa, idli or other breakfast items.
