    In a pan, dry roast the cumin seeds, and peppercorns. Dry roast the curry leaves until crispy. In a mixie, grind the cumin and pepper coarsely. Add the curry leaves and pulse blend 1-2 times.

    In a bowl, add the maida. Add the spices, cashew bits and salt. Mix well. Add the ghee 1 tbsp at a time and make a rough crumble-like texture.

    Add 2-3 tbsp of cold water and form a dough. Roll this into a log and freeze for 30 mins.

    Cut into even discs and place on a baking tray with parchment paper. Bake in a preheated oven for 15-20mins at 180°C, the edges and bottom must be golden. Cool completely and store in an airtight container for up to 10 days.
