    To a deep pot, add oil. Once hot, place the onion and the ginger flat side down. Add the garlic and the curry leaves and sear until deeply golden, around 5 - 6 minutes on a medium heat.

    Then add the whole spices and salt and saute for an additional 2 minutes.

    Add the mushrooms and saute on a high heat, or until the mushrooms starts to brown and almost all the water has evaporated, around 7 - 8 minutes. Pour in the water to prevent burning and scrape the bottom of the pan. Bring the water to a boil and then lower the flame to a simmer. Simmer it for 30 - 40 minutes on a medium low flame, to maintain a simmer.

    Then add the coconut milk along with salt and the honey. Mix to combine well and simmer for 5 minutes on a medium heat. Strain the broth.

    To make the noodles add all the ingredients to a bowl and mix until a shaggy dough forms. Knead the dough for around 6 - 8 minutes until a smooth soft dough forms. Cover the dough and rest for 30 minutes.

    Add a piece of dough to a murukku press and press it directly into boiling water. Cook the noodles for 2 minutes or until they float. Remove from the boiling water and dunk into cold water.

    To make the mushroom steak preheat a stainless steel pan. Once hot, add oil. Add the mushrooms slit side down and press for 10 seconds. Once deeply golden brown on the slit side, flip the mushrooms, lower the flame to low and add butter, garlic, curry leaves and coconut slits to the pan. Once the butter melts and becomes foamy, baste the mushrooms by spooning the melted butter over them. Keep basting for 2 - 3 minutes. Remove the mushrooms from the pan and let them rest.

    To plate the dish, place the noodles in a bowl, followed by the broth. Place the fried coconut, mushrooms, garlic and lemon wedges along the side of the bowl followed by a sprinkling of coriander leaves. Serve hot!
